    Hakka bamboo shoots

    100g

    frog legs

    200g

    romaine lettuce

    4 leaves

    sweet peas

    75g

    green onions

    2g

    garlic

    2g

    ginger

    2g

    potato starch

    1 teaspoon

    soup stock          

A. Slice the bamboo shoots into 0.4 cm pieces. Prepare the romaine lettuce.
B. Chop the frog legs into small pieces, and marinate with bamboo shoot juice, then thicken with potato starch and cook at 140⁰C for 20 seconds.
C. Add a small amount of oil to a pan and sauté the garlic, ginger, and bamboo shoots; add the soup stock and sweet peas and cook; then add the ingredients from B and cook over high heat. Serve in champagne glasses with leaves of romaine lettuce.
